For the Cake

3 eggs

1 1/4 cups water

1/4 cup whipping cream

1 cup firmly packed brown sugar

1/3 cup oil

3/4 cup coarsely chopped pecans

1/2 cup butter or margarine

1 18.25-oz. pkg. Devil’s Food Cake Mix

For Topping

1/4 teaspoon vanilla

1/4 cup powdered sugar

1 3/4 cups whipping cream

16 pecan halves, 16 chocolate curls, optional

Preheat the oven to 325 degrees Fahrenheit (180 degrees Celsius). Line and grease two 9- or 8-inch round cake pans.

Combine butter, 1/4 cup whipping cream, and brown sugar in a small heavy saucepan. Cook, stirring regularly, over low heat until butter has melted. Sprinkle chopped pecans evenly over the batter after you pour it in two prepared cake pans.

Combine cake mix, water, oil, and eggs in a large mixing bowl; beat on low speed until everything is finely combined and moistened. Using a mixer on medium speed, beat for two minutes. Pour the batter over the pecan mixture with care.

Bake for 35 to 45 minutes at 325°F, or until the cake springs back when lightly touched in the center. Allow to cool for 5 minutes before removing from the pans. Allow for 1 hour of cooling time or until absolutely cool.

Beat 1 3/4 cup whipping cream in a small bowl, whisk until soft peaks form. Combine in the powdered sugar and vanilla extract and keep whisking thoroughly until stiff peaks form.

To build the cake, place one layer with the praline side up on a serving platter. Half of the whipped cream should be spread on top of the cake.

Place the second layer on, praline side up, spread the remaining whipped cream on top of the second one. Serve with entire pecans and chocolate curls as garnish.
