It’s A Gorgeous Cake With A Beautiful Purple Color – Purple Buttercream Celebration Cake Recipe

This purple cake with vanilla buttercream frosting is so simple to make you won’t believe it and so fun to eat you won’t be able to stop at one slice! What I love is that the colour and flavour of the cake are so unexpected and distinct, and that after the first bite I wanted to keep tasting more.

INGREDIENTS

For The Cake

1 1/2 cup butter softened

2 1/4 cup sugar

4 egg whites

3 tsp vanilla

3 cups flour

3 tsp baking powder

1 1/2 cup milk

Purple Gel food coloring

For The Buttercream

1 1/2 cup butter softened

1 1/2 cup shortening

3 tsp vanilla extract

6-7 cups powdered sugar

Purple Gel food coloring

For The Ganache

1 cup white chocolate chips

1/2 cup heavy whipping cream

Purple Gel food coloring

INSTRUCTIONS

To Make The Cake

Preheat the oven to 350F. Place parchment paper in the bottom of three 9 inch round cake pans. Spray the pan and parchment paper with nonstick cooking spray.

In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and sugar until fluffy. Beat in the egg whites and vanilla for about 1 minute until combined.

In another bowl, whisk together your flour, baking powder to combine.

Alternately add the flour mixture and your milk into the batter, mixing after each addition until combined.

Add in enough food coloring and mix on low until you get your desired color.

Divide the batter evenly between your prepared pans.

Bake for about 30 minutes until a toothpick inserted into the center of the cake comes out clean or with a few cooked crumbs attached.

Allow to cool in pans for about 5 minutes then transfer to cooling racks.

To Make The Buttercream

Mix together your butter and shortening in a large bowl until light and fluffy.

Mix in the vanilla to incorporate.

Add your powdered sugar until you reach your desired consistency. Add in enough food coloring and mix on low until you get your desired color.

To Make The Ganache

Add chocolate in a heat proof bowl.

Add the cream into a small saucepan and heat until it just begins to boil, then pour the boiling cream over the chocolate and allow it to sit for one minute to soften the chocolate. After a minute, whisk the chocolate and cream together until the mixture is shiny and smooth. Let cool for about 10 minutes.

To Assemble

Once cakes are cool, remove cake domes from top with a large serrated knife. Place the first layer of cake on a cake plate. Spread about 1 cup of the frosting on top in an even layer.

Add a second layer of cake and add another 1 cup of the frosting on top in an even layer.

Add the final cake layer and apply the buttercream frosting to the top and sides of the cake. Then place the cake in the refrigerator for about 15-30 minutes to set.

Remove cake from the refrigerator and spoon a little of your ganache over the edges of your cake so it drips down the sides.

Using an open star tip, pipe swirls on top of cake and around bottom with your remaining buttercream.

Refrigerate until ready to serve.
