Papanasi is actually the name of an unleavened cheese pastry paired with sour cream and jam, (and maybe some sour fruits in this recipe). The typical treat has a golden exterior and a soft interior. It’s made out of a donut-shaped dough and a little dough ball. It’s typically made with soft cheese.
Fried Papanasi and Boiled Papanasi are two types of this fruity papanasi dessert. The fried variant is more widely consumed. Branza de vaci, a kind of cheese used in the original recipe, is similar to cottage cheese in consistency.
Cottage cheese, smetana cream, and jam are usually used to make this donut, which has cheese as its main element. That’s why Romanian Cheese Donuts is another name for it. This dish is a must-try for anyone who likes the sour-sweet mix in sweets.

For the Donuts:
2 cups of flour
1 cup of cherry jam
1 pound of cottage cheese
1 tablespoon of zest lemon
1/2 teaspoon of vanilla extract
2 cups of olive oil
1/2 cup of powdered sugar
1/2 tablespoon of baking soda
12 tablespoons of sour cream
For the Cherry Jam:
2.5 pounds of sour cherry
1/2 teaspoon of lemon salt
2.5 pounds of granulated sugar
For The Cherry Jam:
Wash the cherry thoroughly after removing the stems. With the help of a toothpick, remove all the cores.
Place the cherries in a saucepan with a layer of fruit and then a layer of sugar and go on, then cover it tightly. Let it take a one-night trip.
After waiting, return to the flame and bring the saucepan to a gentle boil.
Add lemon juice and lemon salt when the jam’s consistency begins to deepen. Mix without crushing the ingred̾i̾ents. After boiling for another 5 minutes, turn off the stove.
Save the jam for the next use.
For The Donuts:
Drain the extra liquid from the cottage cheese. After that, place the cheese in a big mixing bowl and grind it.
With a hand mixer, combine the eggs and sugar in a separate bowl until the sugar is completely melted.
To the sugar mixture, add the lemon zest, vanilla extract, and cheese. Combine all of the ingred̾i̾ents and stir well.
In a mixing dish, combine the flour and baking powder. Then, using a spatula, incorporate the flour mixture with the other ingred̾i̾ents until you have a smooth dough.
Roll the dough into a ball after kneading it. Allow the dough to rest for 15 to 20 minutes.
Dust the counter with flour and place the dough on it.
Make 9 equal portions of the dough. Form each of the eight dough pieces into a doughnut with a hole in the center. With the remaining dough, make 8 tiny balls. The dough with a middle hole will be 6 cm thick while small ball dough is 3 cm.
In a pot, add the oil and heat it over low-medium heat. When the oil is hot, fry the doughnut and dough ball on all sides for 3-4 minutes over medium heat. Remove it from the pan and set it on a serving plate once it has turned golden brown.
Continue to fry the remaining dough in the same manner.
Serve with sour cream and cherry jam.
The eggs should be used at room temperature. Separately add the egg yolk and whítes. To begin, whisk the egg whítes. The dough will be lighter as a result of this.
Start by frying the little balls when making the dough.
Spread a paper towel on the dish after frying the dough to absorb any excess oil.
Shape the dough with your hands to make a hole in the center while preparing the donuts. The dough should be rolled out. Join the two edges together. Straighten the dough with your hands until a hole appears in the center.
Place the donut-shaped dough on the plate first when serving. Serve with a dollop of sour cream and a dollop of cherry jam on top. After that, arrange the little ball on top and top with cream and jam.
Instead of cherry jam, you can use blackberry or blueberry jam, as well as fresh fruits like blackberries or raspberries while presenting the dessert. The sourness of the papanasi dessert would be enhanced by these fruits.
