200g Caster Sugar

200g Butter

2 tablespoon Greek Yoghurt

4 Eggs Medium

25 ml Espresso Coffee

100g 70% Dark Chocolate Melted

For the Mint Buttercream

300g Icing Sugar

150g Butter Salted

2 tablespoon Whole Milk

1 teaspoon Peppermint Extract

Green Food Colouring Gel

For the Oreo Frosting

300g Icing Sugar or Powdered sugar

150g Butter Salted

6 Mint Oreos Crushed

2 tablespoon Whole Milk

To decorate

12 Mint Oreos

Make the cake

Preheat the oven to 350 degrees F. Grease 3 6-inch cake pans and line with a round of parchment. Grease the parchment then set aside.

In the bowl of a stand mixer fitted with a paddle attachment, beat the butter until softened. Beat in the sugar and Greek yoghurt until well mixed. Add the eggs one at a time, beating well after each addition until the mixture is thick, but light, and pale in colour.

Add the flour and cocoa powder, and gently mix together until the cake batter is soft and smooth.

Add the melted chocolate and Espresso coffee and mix through the batter until silky smooth.

Divide batter evenly between pans, then bake for 20-25 minutes until a toothpick inserted in the center comes out clean.

Cool in pans for 5 minutes, then transfer to a rack to cool completely.

Make the mint frosting

Beat the butter in a large bowl or stand mixer until soft. Add half the icing sugar and half the milk, then beat together.

Then beat in the peppermint extract, remaining icing sugar and milk until smooth.

Colour with a green food colouring gel.

Make the Oreo frosting

In a food processor, crushed the Oreos into a fine crumb. In the bowl of a stand mixer, beat the butter until soft.

Add the icing sugar, Oreo crumbs and the milk, then beat until smooth. If the frosting is too stiff, add a tablespoon of whole milk and mix.

Assemble the cake

Place one layer of cake on a cake board or serving plate. Spread about 2 tablespoons of the mint buttercream evenly on top.

Split half the remaining Oreos in half and layer them on top of the mint buttercream then spread another thin layer of mint buttercream on those.

Repeat with the following layer of cake. Set the third cake layer on top and spread the Oreo frosting over the top and sides of the cake.

Chill the frosted cake for at least 30 minutes in the fridge. Using remaining mint buttercream, pipe swirls of frosting around the top of the cake, place the remaining mint Oreos between each of the swirls.

The Mint Oreo cake will keep in an air-tight container for up to 3 days!
